My World Famouse Ginger Biscuits!

Ok so maybe not world famous (only famous to my family and a few of the north westers!) and I can’t take any of the credit since I got the original recipe from this awesome blog but for anyone who has asked here is the recipe. It’s pretty much what is on the blog with only a few changes to suit what I had at home.

4-1/2 cups plain flour
4 teaspoons ground ginger
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon all spice
1-1/2 cups butter, room temperature
1 cup sugar
1 cup brown sugar
2 eggs
1/2 cup golden syrup
Little bit of extra white and brown sugar mixed to roll biscuits in before cooking if desired.

1 In a medium mixing bowl stir together dry ingredients… I sift the flour but not sure that matters much
2 In a large mixing bowl cream butter and sugar. Beat in eggs and golden syrup. Add the dry ingredients a little at a time mixing well.
3 Shape dough into balls, roll in extra sugar and place n baking tray.
4 Bake in a moderate oven for 12 to 14 minutes or until cookies are light brown and puffed.

This makes HEAPS of biscuits…especially if you make them a reasonable size. You could easily half the recipe and still have plenty. They seem to keep pretty well in an air tight container but ours never last too long anyway. I want to try freezing half the dough for baking later as I reckon that would make life easy - just wack out a long stick of dough cut of biscuits and bake… not sure how it would freeze though as it is pretty soft dough.

I like them a little of the soft side so cook them at the shorter end of the cooking scale.. though I was vacuuming last weekend and didn’t hear the timer and the Baldy Boys says they are good even a little over cooked (read slightly burnt) just nice and crunchy.

Am thinking whether I will make another batch this weekend for our guest tomorrow or maybe try something else… so hard to decide if I should go with tried and true or risk mucking up something new! But the weather is cold and wet here so go forth and bake!
