Zucchini and Peaches and Apricots - oh my!

We headed out for a day trip today - to Nagambie. Of course we took the long way round via, Harcourt to check out the scenery and drool over some of the gorgeous old farm houses. We ate a picnic lunch by Nagambie lake and then headed off to find a spot where the girls could ’swim’. It was a beautiful day up there, a bit windy but that didn’t stop the Twinadoes from splashing about and enjoying themselves for a good hour.
On our way home (again we took the back roads looking for interesting things to photograph), we stopped along the way to buy some fruit from a local grower. We got a huge box of apricots, a box of peaches and the last of this seasons cherries!
Mmmmmmm!
The girls pigged out on cherries after dinner. They haven’t quite mastered the art of eating around the pip and ended up with a lot of cherry juice running down their chin which gave me a bit of a flash back to that visit to the library but mmmm big, fat, dark, sweet, cherries!
I don’t think the cherries will last long enough to cook with but we won’t be able to eat all the apricots before they go off so I am on the look out for simple recipes for apricots. Maybe I can simply preserve them somehow as we eat a LOT of fruit in this house, tinned when fresh stuff is not in season.
Sadly the peaches are not great, not a huge deal as we paid $2 for about 3 kilos, but it seems such a waste to just feed them to the chooks. They are kind of floury and dry and taste like nothing. Does anyone know if they’d still be ok to cook with or preserve?
Apart from all the fruit I need to do something with, we already have a zucchini problem. It seems like over night they went from a few tiny things to huge base ball bat sized monsters! We’re already making all the zucchini recipes we discovered last year at about this time and I have plans to try the pickling recipe that Kate over at Two Little Banshee’s linked to. Anyone else with zucchini recipes?
It’s funny, I am not really into cooking. I have never enjoyed it in the past and only recently found my passion for it based mostly around living within our tiny food budget. But tonight the thought of tomorrow spent in the kitchen making good use of all this good food sounds quite nice… well except for the million and one other things I need to do tomorrow as well!

Gorgeous photos and the fruit sounds yummy..

They have a few good tips which may help.. Plus heaps of jam recipes which may help those peaches as well what doesn’t taste great with sugar lol
I might have to take some pics of our zucchini and see what you think but all of a sudden it too has gotten big no idea if something shall come of it but I figure we are learning lol
