I have picky eaters too. I need to figure out what to feed my daughter for lunch when she goes to school. I'm going to try the muffins. They look yummy.

Excellent idea. Boo sounds just like your girls with breakfast, and I was at a loss what to feed her in the morning before kindy (at least at daycare there is always food when I can't get breakfast into her)!

Apparently Waffles freeze really well, according to one frugal foodie http://www.onefrugalfoodie.com/2010/01/25/nutty-oatmeal-blender-waffles/#com

not that I've ever made waffles, but maybe the girls would go them,

My girls like ABC Muffins
http://leechbabe.wordpress.com/2008/06/27/abc-muffins/

Zucchini Slice is always a school lunch box winner. I make it up and freezer it two squares together in ziplock bag. Then pop into the lunch box in the morning, it defrosts by lunch time but stays fresh.

Heidi still not very happy about breakfast, banana in yogurt is her fav. in the morning. Also tinned baked beans, just open the tin, pour into a bowl and she happily eats it (so easy). If I'm desperate I know she will snack on nutrigrain so I have ziplock bags on hand with 2/3 cup of nutrigrain measured into each of them. I can grab a bag as we are running out the door and Heidi will nibble on it.

You can make pancakes in advance and freeze into individual breakfast portions, then reheat in the microwave and serve.

Wow, that does make it quite difficult when your kids won't eat sandwiches! Thank goodness your kids are not the ultra-fussy type. (eg. ones who only eat "yellow" food). If you're after some lunchbox inspiration, Super Food Ideas magazine has a regular feature of lunchbox food ideas...

In regards to breakfast foods, maybe you could also try fruit salad (pretty easy to prepare the night before)?

Those muffins sound really good. And not full of fat (as some muffins are). I think I might have to try them, those sorts of ingredients are usually on hand at my house :)
