While out driving the other day The Baldy Boy discovered an ancient apple tree on a country back road.
He came home with five HUGE bags of apples!
I’ve been pealing and coring apples every day for more than a week. They are deliciously tart when eaten fresh. We’ve eaten stewed apples till they are coming out our ears. We’ve made Apple and rhubarb pie, apple muffins and many variations of apple in pastry. We bought a juicer and made apple juice (any tips on how long apple juice will keep?). We’ve given away bags of apples and I’ve even frozen a fair few bags of stewed apples, for the day, a long way in the future, when we are no longer over eating stewed apples!
But we still have apples.
So come on people…. hit with your best apple recipes so I can use up the last of this fabulous free apple stash!

I’d say apple sauce, either jarred or frozen, useful for adding to cakes and slices for sweetness and added moisture.
Or, dried apple for snacks.
Mmmmm, I feel like apples.
Apple fritters, because we all need to indulge! Hmmmm … apple fritters with ice cream!
Not a fan, as I don’t like fruit peel, but fruit mince stuffed apples. Or just sultanas …
Kate,
Well, if you want to try one of the most popular and tastiest Polish recipes, and you have a sense of adventure, here you go:
http://easteuropeanfood.about.com/od/polishdesserts/r/szarlotka.htm
Szarlotka is like apple pie, but the crust is very, very different (as you can see by both the photo and the list of ingredients). I suggest it because szarlotka turns out best when used with tart apples.
If you decide to try it out, be sure to top the szarlotka with either vanilla ice cream or whipped cream – that way you’ll have the REAL full-on Polish experience ;)
Apple Butter!!!
It does not have to be Granny Smith Apples, I’ve found that a mix of variety of apples gives the best flavour.

I’ve used Pears in the past as well with equally tasty results.
here is my apple and pear butter in the slow cooker recipe

Marita, do you use that like you would lemon butter?
Get a dehydrator! Ours is currently going full pelt drying apples from my father in law’s tree. Some of the layers just have slices of apple, and some have apple & berry fruit leather. Yum! Actually, I think you can do fruit leather in a slow oven, too. Google it!
Dried apples will keep for ages, provided you can keep them out of reach :)
I can’t offer any advice-I’m eating an apple crumble from said apples as I read!
My fave apple recipe at the moment is an apple and oat slice I found at bestrecipes.com.au
I like to stew and puree extra apples to use in baking! Much better than using butter!
I second stewing & bottling a few jars as they are great to pull out later (I’ve just done a batch tonight).
If you like I can send you some spare garlic cloves to plant (I’ll need to check if that’s legal….from Tasmania?) Anyhow let me know & I’ll get back to you….I’m away for the next week though.
Apple in a jar … you don’t have to eat it now:
