Ok after the chat at PBP on Saturday there was a request for me to post my tortilla and turkish bread recipes. I thought I have blogged these before but I can’t find them so here they are, too bad if I have double up!

Flour Tortillas – this recipe is a combination of a few I found when googling…it’s super easy, not even any yeast or waiting to rise!

4 cups of flour (I use regular flour if we don’t have any bread flour and can’t tell the difference)
1 1/2 tsp salt
1 1/2 tsp baking powder
1/2 cup of ‘shortening’ (that is what the recipe said but I use olive oil spread/marg and it works fine)
1 – 1 1/4 cup water (generally I need the extra 1/4 cup)

Mix all your dry ingredients in a big bowl.
Rub in the marg with your fingers till it is combined with the flour and sort of crummy (there is a proper baking term for this I think but I have no idea what it is).
Make a well in the centre and add about half the water.
Mix well and add more water if needed till you get a dough that you can knead with your hands.
Knead it till it comes together in a smooth dough then cut into small balls – 8-12 depending on how big you want them.
Roll out nice and thin… the thinner the better I think but I suck at rolling.
Cook in a hot pan on the stove, turning once – I am thinking you could also cook them on a grill plate too, I use an ancient cast iron fry pan that gets nice and hot and then stays at a consistent temp
Cover them with a damp tea towel and they’ll stay nice and soft while you are waiting to eat them but cooking them right before you want to eat works best.

Damn I can’t find my flat turkish bread recipe now… but we made naan for the first time last night so here is the link to the recipe we used for that… worked out really good! Oh and .25 oz is about 2.5 teaspoons of my yeast!

    Yummo Kate – but please tell me – what do you do with Tortillas once you have made them. Are you meant to wrap something in them – is it a mexican sort of thingo? please help the uneducated!
