Gingerbread Cupcakes

Serves: 12 large cupcakes or 24 small ones
  • 1 cup of plain flour
  • ¼ tsp baking soda
  • 1 tsp powdered ginger
  • ½ tsp cinnamon
  • ½ tsp allspice
  • 90 gm butter, softened
  • ½ cup brown sugar
  • 2 tbsp molasses, golden syrup or treacle
  • ¼ tsp vanilla
  • 1 egg
  • ¼ cup milk
  1. Preheat the oven to 180 Celsius and line a muffin tin with cupcake cases.
  2. Combine the flour, baking soda and spices and mix well.
  3. In a separate bowl beat the butter and sugar until light and fluffy, add the molasses and mix well.
  4. Add the egg, vanilla and milk and mix for a few minutes until well combined.
  5. Add the dry ingredients to the wet and mix well.
  6. Spoon the mixture into the cupcake cases until they are ¾s full and bake in the oven for 20- 30 minutes or until the cupcakes are springy to the touch.
