Orange and Chocolate Chip Muffins (from scratch)

  • ¾ cup of sugar
  • ¼ cup of oil
  • 2 eggs
  • 2 cups plain flour
  • 2.5 tsp baking powder
  • zest of one orange
  • flesh of one orange chopped
  • ½ cup orange juice
  • ½ cup milk
  • 1 cup dark chocolate chips
  1. Preheat your oven to 180 Celcius and line a muffin tin with paper cases.
  2. In a large bowl combine the sugar and oil, add the eggs and beat well.
  3. Add the orange zest and flesh of the orange.
  4. Add the flour, baking soda, and chocolate chips.
  5. Add the orange juice and milk and mix well.
  6. Fill your muffin cases almost to the top and bake in a moderate oven for 25-30 minutes until they begin to brown on top and a skewer comes out clean.
  7. Drizzle an orange glaze (orange juice and icing sugar) over the top and sprinkle with more zest, or just eat them plain.
