Sticky Gooey Monster Rice Bubble Treats

  • 60g butter
  • 4 cups marshmallows (white)
  • 5 cups rice bubbles
  • green food colouring
  • Pre-made chocolate eyes, or candy eyes
  • raspberry licorice, or lolly snakes (for mouth)
  • Sprinkles or other lollies to decorate (optional)
  1. Before you mix up the rice bubble mixture, make sure you have all your decorations ready. Make the chocolate eyes, and cut the licorice into small strips for the mouths.\
  2. In a large saucepan, over a love heat, melt the butter.
  3. Add the marshmallows and stir until they are melted.
  4. Cook the mixture for another minute or two, stirring constantly, then remove from the heat.
  5. Add 5-10 drops of food colouring, and mix well.
  6. Stir through the rice bubbles until they were well coated.
  7. While the mixture cools a little and becomes sticky, set out 15-18 cupcake liners on a tray.
  8. When the mixture has cooled for a minute, using two spoons shape spoonfuls of the rice bubble mixture into rough balls and pop them into the cupcake liners.
  9. Decorate them with eyes, a mouth and any other decorations you like.
  10. Put the rice bubble monsters into the fridge to set for around 30 minutes.
