Today I have the last of my guest recipe posters – Penny from Wildlife Fun 4 Kids.
I love to make mini quiches with my not-so-mini family of five. They are always so tasty, and suitable for a wide range of occasions. I love that you can hide veggies in them (especially if you have fussy eaters) or that your children can get involved in the quiche-making process and choose the ingredients that go in them.
I’m not a great cook, I’ll admit it, but even I can make this recipe! It’s quick and simple, but for me the best thing about it is the way the delicious smell of cooking quiches brings back memories of cooking with my mother.
These days, I make this recipe with my children. Fortunately for them, they have more panache in the kitchen than me, and Miss Possum will occasionally encourage me to try adding a new ingredient. It usually ends up being a hit too!
So this is our mini quiche recipe and remember, you and your children can be as creative as you like. The possibilities are endless.
Mini Quiche Recipe for Little Critters |
- 3 eggs (we use free range chicken eggs)
- Grated cheese
- ¼ cup milk
- 2 puff pastry sheets (you can make your own here, or not use any at all!)
- ½ punnet of cherry tomatoes
- 100g ham
- Mushrooms
- Corn, shaved off the cob
- Shallots
- Garlic
- Thyme
- Additional ingredients could include: grated zucchini or carrot, feta, spinach, capsicum, even pumpkin!
- Pre-heat oven to 180 degrees Celsius.
- Use a mug or cup to cut out the right sized puff pastry circles needed for your muffin/cupcake tray.
- Grease the muffin/cupcake tin and then gently place the puff pastry circles into the tin.
- Let your children add their ingredients into the puff pastry cups now. I let Miss Possum smell the different herbs and add the one she liked best (she loves garlic!). The twins had a smell but weren’t keen to add any to theirs.
- Wisk the eggs and milk in a bowl (make sure you let the kids have a go too).
- Add the cheese to the egg mixture (leave some out for the topping) and give it a gentle mix.
- Tip the egg and cheese mixture into each puff pastry cup until it fills the pastry cups. Sprinkle some cheese on top.
- They only need to go in the oven for 10-15 minutes at 200 degrees Celsius, or until they start turning a lovely golden brown on top.
And viola, mini quiche creations for little mouths!
Oh, and if you want to get even more creative, use some animal or shape cookie cutters to cut shapes out of slices of ham and lay it across the top. Yum!
