Chicken Mushroom and Broccoli Pasta Recipe

There are not many dinners that make everyone in our house happy, but this is one of them!

Super Easy Chicken Mushroom and Broccoli Pasta.

Chicken mushroom and broccoli pasta recipe

Approx 300gms chicken thigh (or breast if you prefer)
A bag of button mushrooms
a little butter or oil
broccoli
1 cup of stock or cream of mushroom soup
300gms sour cream
pepper to taste

Cut up the chicken into small pieces and cook till brown and yummy.

Slice up the mushroom and broccoli.

I always get the kids to help with cutting the veggies for this meal. If you cut the mushrooms in half first they are easy to cut even with a butter knife. Break off the broccoli ‘branches’ and the kids can use a butter knife or serrated table knife to cut them into small pieces too.

Cook the broccoli until just soft in either the microwave or on the stove. While the broc is cooking, add the mushrooms to the pan with the chicken and pop in a few knobs of butter (or a little extra oil if you don’t want to use butter) and cook till the mushrooms are soft and delicious looking.

Add the cup of stock or a made up packet of cream of mushroom ‘cuppasoup’ or some of your own home made mushroom soup for extra mushroomy, creamy goodness. Then add the cooked broccoli and sour cream and give everything a good stir while it comes back to a gentle simmer. Add some cracked pepper if you like and serve with pasta of your choice!

My problem when I get the kids to cut up veggies, including both mushrooms and broccoli, is that very little makes it into the bowl. The majority goes into their mouths!

I’m jealous of both yourself and Chris that you can get mushroom and broccoli into your children’s mouths! Maybe when Lil is a bit older a role in the food prep will help.
