My kids would eat Tacos every meal in the summer time. That’s why I learned to make my own taco seasoning and my own flour tortillas.
But I try not to buy veggies that are totally out of season, so now that the cold weather is here, I’m not buying fresh tomatoes and cucumbers which are a staple with our Tacos so we’ve switched to winter Burritos instead!
If it weren’t for making the tortillas (I’m still waiting on my tortilla press to speed up the process) this would be a super quick and easy meal. But all that rolling of dough at least keeps me warm in our still ceiling-less kitchen!
Easy Winter Burritos
Make up your favourite burrito filling.
Ours consists of –
About 250grams minced beef
2 big carrots finely diced
Some cauliflower really finely chopped.
Some frozen corn
A tin of baked beans.
Taco seasoning.
You really can use any combination of meat and/or veggies for the burrito filling, whatever takes your fancy. And make it as hot and spicey or as mild as you like.
Then it is just a matter of filling your tortillas. I make them a little bigger than usual for burritos and get about 15 from my standard tortilla recipe.
Make a bit of a production line out of putting them together – put down a layer of foil, then your tortilla, then add a spoonful of mix and sprinkle on some cheese. Next comes the wrapping – fold the end up, then the sides of the tortilla then do the same with the foil – end, then sides then finally fold down the top, then onto a tray and into a moderate oven till they are hot!
We serve ours with a side dish of rice and veggies. Stir a little taco seasoning and cheese through the rice and veg, top with a bit more cheese and bake in the oven.
It’s perfect winter food for us. So perfect… the darn kids ate them all before I could take a photo of the finished product!
