Five Things to Cook with Zucchini.

It’s zucchini season again.

The time of the year where we try and find a way to eat a zucchini every day so we can keep up with the plants and not to let any grow to the size of base ball bats!

It gets easier to accomplish each year as I find more and more great zucchini recipes.

Here are a few of our favourite zucchini recipes.

Five Things to Cook with Zucchini

1. Zucchini and Potato Fritters.
An easy side dish and you can use veggies other than zucchini too.

2. Zucchini Slice
The quickest, easiest zuc recipe ever. My kids can just about make this on their own!

1 big zucchini grated
1 big carrot grated
5 eggs
1 cup of self raising flour
1 cup of grated cheese
50ml oil
Onion, herbs, slat and pepper.
Mix it all together and cook it for 30 minutes and eat!

3. Zucchini bread/cake/muffins.
This recipe makes a LOT of cake, enough for a small loaf as well as heaps of muffins. It’s a lovely afternoon treat and great in lunch boxes.

4. Zucchini Boats
This couldn’t be easier…. cut the zucchini down the middle (cut it half if you have a big one and need smaller portions) and bake in the oven. Once the zucchini is pretty much cooked, sprinkle with cheese and herbs and bake till the cheese is golden and melted.

5. Carrot, Zucchini and Beef Stir Fry.
This is a favorite treat meal of ours, something we have every once in a while. I often freeze zucchini strips so that we can have it at other times of the year too.

Marinate beef strips in garlic, soy sauce and cummin.
Cut Carrots and Zucchinis into thin strips (add some onion or other veggies if you like).
Stir fry the beef strips in a little oil, add onion, carrot and zuchinni and a little of the left over marinade.
Cook well and serve over steamed rice.

    Have you tried Chocolate Zucchini Cake? Super easy and super yum. I tested it on kids and adults (I didn’t tell them what was in the cake) and every crumb was eaten without a complaint. My little boy was telling everyone that I had made a chocolate bikini cake!

    Love zuchinni time of the year! Another way to use them up is to make zuchinni chutney…it’s delicious and a great way to preserve them and it is great on sandwhiches with cheese.

    I think every gardener has a repertoire of zucchini recipes! They are such a boom-bust vegetable. I have come home from just a couple of days away from the garden to find a monster more than once. I have a whole collection. If I had to pick three favourites: Zucchini Macaroni Cheese with Crumbles, Zucchini Ginger Muffins, and Lebanese Marinated Zucchini et al.

    Hi Kate,
    I have been a little disappointed with my zucchini crop to date this year. I was hoping by this time to have an abundance like last year. I am avoiding buying them to make things with as they are slowing growing in the garden….My family loves zucchini, it is so versatile. There are so many lovely recipes to be made with it.

    As usual lots of wonderful ideas here Kate.

    On the weekend I made zucchini and sweet corn fitters (http://www.taste.com.au/recipes/16086/sweetcorn+and+zucchini+fritters) . Hit with son number 1, not so number 2. I enjoyed them with chutney and agree with a lot of the comments on taste that they need a little something extra to zing them up. Having said that – super easy Saturday lunch!

    Last summer I discovered that you can easily add zucchini to your yeast bread, tastes yummy and uses up 3 cups at a time. You can use the dough for all kinds of things too like cinnamon rolls.     We usually just grill zucchini after coating it in Zesty Italian dressing. Simple, but yummy.

    I love zucchini, but never can think of many quick recipes that use it. I’m printing out your post to keep in my family recipe binder. Thanks for the ideas!

    One of our favorites is really easy, we just slice the zucchini into rounds and saute in coconut oil! Then we arrange them on a platter, salt and use tooth picks to eat them with :) We usually do a combo of zucchini and yellow summer squash.

    We use zucchini in loads of things…
    * replace the eggplant in mousakka with grilled zucchini
    * grate zucchini into our spag bol
    * slice lengthways and sprinkle with moorocan spices and grill on the BBQ
    * make vegetable lasagne
    * ratatouille!
    * stuffed zucchini with rice and various herbs from the garden
    * parmesan crumbed zucchini fingers baked in the oven
    * roasted zucchini and tomato wth crumbled feta for a warm salad

    I love the zucchini and rice slice that Coles had on their recipe site a while ago.

    Also ratatouille cooked in the slow cooker. Easy and delicious.

    I’ve frozen sliced / diced / grated zucchini before for use throughout the year as it is such a versatile veggie.
