Lemon and Berry Muffins
It’s Monday Muffin Morning!
I’ve decided we all need some incentive to get out of bed on Monday mornings, so I’ve declared Monday to be muffin day.
I figure my homemade muffins probably contain the same amount of sugar as a bowl of commercial cereal, and a lot less preservatives and chemicals, so having a muffin for breakfast won’t hurt. If I add some extra fibre in the form of wholemeal flower, oats and/or bran, plus fruit I reckon I’m coming out on top.
This week’s Monday morning muffins were lemon and berry!
I use our homemade muffin mix which means I can have a batch of big fluffy muffins in the oven in less than five minutes, but you can make these from scratch if you like.
You can add a handful of chopped almonds (or walnuts if you are not allergic like we are) and exchange some of the flour in the muffin mix for oat flour or wheat bran to up the nutrients and fibre.
- Using the homemade muffin mix:
- 2 eggs
- 1/4 cup of oil
- 2 and 3/4 cups of homemade muffin mix
- 1/2 cup of milk
- 1/2 cup lemon juice
- zest of one lemon
- 1 cup berries
- Making from scratch:
- 3/4 cup of sugar
- 1/4 cup of oil
- 2 eggs
- 2 cups plain flour
- 2.5 tsp baking powder
- 1/2 cup of milk
- 1/2 cup lemon juice
- zest of one lemon
- 1 cup of berries
- Pre heat your oven to 180 Celcius and line a muffin tin with paper cases.
- If you are using the homemade muffin mix –
- In a large bowl combine the eggs and oil and beat well.
- Add the muffin mix, milk and lemon juice and mix well.
- Lastly stir through the berries.
- If you are making from scratch:
- In a large bowl combine the sugar and oil, add the eggs and beat well.
- Combine the flour and baking soda and add it to the wet ingredients.
- Add the milk and lemon juice, mixing well.
- Lastly stir through the berries.
- Fill your muffin cases almost to the top and bake in a moderate oven for 25-30 minutes until they being to brown on top and a skewer comes out clean.

My kids think it is awesome to have cake for breakfast, I just think it’s awesome not to have to drag anyone out of bed!

We have various things for breakfast including porridge, toast with peanut butter or Bovril, shreddies or cornflakes. On special occasions might have crumpets or croissants. I try not to have a sugary breakfast and will use fruit if the children would like it sweeter.
Muffins would probably be used as a pudding in our house or a special treat!
My Mum was always worried about our teeth and we weren’t often allowed sweet things and I seem to be passing this on to my children too!
