After hauling the eternally starving hungry three year old out of the kitchen cupboards this morning, I discovered, way up the back, a half full box of ‘forest berry muesli’. I couldn’t remember when I’d bought it, if I bought it, because I can’t imagine anyone in our house actually eating it. I checked the use by date… still good… now what to do with it!?!
“I know” says the under-fed boy child, “Lets make a cake”.
Despite the fact that ‘experimenting’ with recipes has never been my strong point, I figured we’d give it a go anyway…. and ‘blow me down’ (Captain Feather Sword) they turned out fabulous!!
The reason there is only one muffin in the photo above, is because that is the only one I managed to save long enough to photograph!
Muesli Muffins
Basic cup cake/muffin recipe
125 g butter
1/2 cup sugar (we like brown sugar)
2 eggs
2 cups of self raising flour
1/2 cup of milk.
To that we added –
1 cup of forest berry muesli (or whatever muesli you like) soaked in a little milk
3 tbs of berry pure (we mushed up some frozen raspberries, you could use jam if needed)
Soak the muesli in a little milk to soften while you do every thing else. Cream butter and sugar, add the eggs and beat well. Add the sifted flour and milk a little at a time until combined. Add in your muesli mix and the berry much and stir through.
Spoon into patty pans or into well greased muffin tin and bake in a moderate over for about 15 minutes. We got 27 smallish muffins out of our mix.
