‘Cheap and Easy.’
That is pretty much my goal for most meals we eat around here. We are on a rather tight food budget and I am not a whizz in the kitchen, so if I can combine those two things I am happy. Even happier if it’s tasty.
Beef and Veggie Triangles
This recipe is adapted from this one at taste.com.au. I’ve discovered this is indeed cheap and especially easy to adapt to whatever you have laying around. Plus the added bonus of it being tasty. Everyone in our house loves them, and it makes heaps too, plenty left over for lunch the next day!
Basic Ingredients
350g (or there abouts) beef mince – or any mince meat really
4 sheets frozen puff pastry – or you could make your own pastry if you are clever
Basic Method
Brown the mince meat well, drain any fat. Add in other optional ingredients (which I will get to in a minute).
Pre-heat your oven to 200°C. Line some trays with baking paper. Allow the pastry to defrost a little… but not too much.
Cut each pastry sheet into four and place a tablespoon or two of mixture in the middle of each. Fold the pastry in half to form a triangle and use a fork to press down well around the edges.
Pop the triangles on a tray – at this stage you could get fancy and brush with egg and sprinkle with sesame seeds, or you could do what I do and just wack them in the oven for about 15 minutes or until they are nice and brown and crunchy looking.
Variations
The original recipe called for minestrone soup to be added to the mince mix which sounds yum but we didn’t have any, so the first time I made them I just added some onion (fry that off first then add mince), chucked in some frozen veggies and added a sprinkle of taco seasoning. We served them with sour cream and some avocado dip and salad and called them ‘taco triangles’. Yum!
I’ve also made them with a curry flavour – adding some cooked cubed potatoes, some broccoli and carrots and some curry powder. Also yum!
What I like most about this is that you could potentially fill them with anything. We almost always have some mince in the freezer but you could go totally vegetarian if you liked. I think they’d be nice with chickpeas or lentils and veggies. I am also thinking you could do cheese filled ones much like ‘cheese and spinach triangles’, or tuna or even pizza fillings. Serving them with dips or sauces, salad or veggies… the possibilities are endless and easy!

They sound very tasty and I love the fact that you could easily use leftovers to fill them up. We often have meat left over from tacos and this would be a great way to use it up.

This sounds marvellous, I just know my kids will love this. So simple, yet I have never tried it.
Yummo!! Have you tried them as a pie in a piemaker?? We use all our leftover mince *spag bol, curries, even drained chicken soup* into pies and add cheese or potato topping.. Best way to get rid of the leftovers (our kids love pie night – even if they’ve had spag bol 2 nights in a row!)
