Cinnamon Ripple Banana Cake
Easy and delicious cinnamon banana cake.
Ingredients
- 125 gms softened butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 2 cups self raising flour
- 1/2 cup milk
- 2-3 brown bananas – mashed
- 1/3 cup of sugar – extra
- 2 tbsp cinnamon
Instructions
- Preheat your oven to 180 C and line and grease a large loaf pan.
- Cream the butter and both sugars until they are light and fluffy.
- Add eggs one at a time, mixing well between each one.
- Fold in the flour and milk alternately, then mix in the banana till just combined. You may want to add a splash more milk if your mixture is too thick.
- Combine the extra sugar and cinnamon (we added some allspice too because we love it) in a bowl.
- Put a thin layer of cake mix on the bottom of the tin and spread it out as best you can with a spatula.
- Sprinkle about half the cinnamon sugar mix on top of the cake mix – don’t be afraid to use lots!
- Spread another tin layer of cake mix and sprinkl again with the cinnamon sugar.
- Then put a final layer of cake mix over the top and into the oven for 45 minutes or until a skewer places in the middle comes out clean.
- If you want to ice the cake allow it to cook for as long as you can then ice it with a simple icing made from 1/2 tbsp of melted butter, 1/3 cup of icing sugar and enough milk to make it runny, then drizzle over the top of the cake.

Do you have a favourite way to use up brown bananas?

Oooh, that’s such a lovely twist on an old fave. x
Banana & Cinnamon & Icing = Perfection! Thanks a lot for sharing! Here in Germany, the icing would be a mix of sugar powder (=icing sugar) and a little lemon juice, that adds a refreshing touch to any cake.
What she said!! Love it
Yuuuuuummmmmmm…. I have been making snickerdoodle slice lately to get my cinnamon fix, but everyone around here adores banana cake so this looks like a fabulous alternative. If I am in a hurry I do love the 1:1:1:1 cake, or a really easy lemon drizzle (or plum) cake recipe that my aunt gave to me… you don’t actually have to twist my arm very hard to make cake :)
Just having a go at this lovely banana cake, its way too hot to be outside, so a spot of baking for my little ones! Lovely and easy to do with the children, they could do all of it wahooo! Can’t wait till its all cooked, cooled and iced yummmmmmy ;o) Thanks Picklebums x
I made this last week and it was wonderful. Thank you for the recipe.

I made this last weekend without the icing and it turned out great :)
2/4 c brown sugar? Do you mean 1/2 c ?
oops no it should be 1/4 cup of brown sugar… or 1/2 cup of sugar in total :) Thanks for picking up that error.
