Streusel Topped Blackberry and Apple Muffins
Blackberries are a noxious weed where we live. They cause us lots of problems on our little property. Just when we think we have gotten rid of one patch of blackberries another pops up.
This year, with some summer rain and some lovely warm weather the blackberries have gone wile and are covered in big ripe berries. But before we attempt to rip out another patch I am getting even with the blackberries and baking them into some muffins!
If you can’t beat them, make streusel topped blackberry and apple muffins instead!
These blackberry and apple muffins are a great way to use up fresh or frozen blackberries, or raspberries, or any kind of berries. The grated apple makes the muffins lovely and moist and the blackberries add a zing of flavour.
If you are using frozen berries, let them defrost a little before you use them.
I topped the muffins with a simple cinnamon and oat streusel. Quick cook oats are great in a streusel mix, but you could also use chopped nuts, or even seeds if you like.
I used our homemade muffin mix to make this batch quick and easily while I was also cooking dinner, but hey are easy to make them from scratch too.

I am hoping these blackberry and apple muffins will fill my kids up after school, then I won’t feel so bad about how out of control the blackberry weeds are!

Made these today and they are lush.
Want to save a couple for a friend how long can they be stored and / or can you freeze them?
They will keep for a couple of days in an air tight container, but best eaten the day or day after you bake them. I have no tried to freeze them as I don’t think the streusel topping would freeze well, but without the topping they would freeze as well as any other fruit muffin. Hope that helps.
