This broccoli and garlic pasta is super quick and easy to make and is the perfect family meal for days when you really wish didn’t have to cook dinner.
Why is cooking dinner every night such a drag?
I don’t remember it being so horrific before I had kids, so perhaps it is the added bonus of having to cook something that multiple people will eat, on top of the usual end-of-the-day-over-it-ness?
Whatever it is, I am just done with dinner at the moment. I am done with coming up with what to cook, I am done with juggling diner around everyone’s activities, I am done with cooking it, and sometimes, I am even done with eating it by the time I put it on the table.
When I’m in a dinner funk like this, I try to meal plan, and I try to make quick and easy meals, that don’t take much brain power!
I needed something super quick and easy to make for dinner last night, so I made broccoli and garlic pasta.
So good, so easy, and (almost) everyone eats it!
There is nothing better than broccoli with a bit of garlic and cheese, and if you add pasta you can totally call it dinner!
You can make this quick and easy pasta dish with fresh or frozen broccoli (thawed first) and you can add cauliflower to the mix too if you like.
Quick and Easy Broccoli and Garlic Pasta
Broccoli and Garlic Pasta
This broccoli and garlic pasta is a quick, easy, and delicious family meal, perfect for busy school nights!
Ingredients
- 500 gms of pasta
- 3-4 cups of broccoli, cut into small pieces
- 1/4 cup olive oil
- 2-4 clove of garlic, minced
- 1/4 cup grated parmesan cheese (plus extra to serve)
- 1/2 tbsp butter
- 1 cup pasta water, reserved from cooking past
- salt and pepper to taste
Instructions
Cook the pasta and save 1 cup of the pasta cooking water when it is done.
While the pasta is cooking, cut the broccoli into bite sized pieces.
Heat the oil in a large pan, add the garlic and broccoli, and cook over a medium heat until the broccoli begins to soften.
Add the cooked pasta to the pan, along with 1/4 cup of grated parmesan cheese, butter, and the pasta water. Season with salt and better and stir everything to combine.
Serve with a sprinkling of extra parmesan on top
