Our All Time Favourite Super Easy Cookie Recipes

Fancy recipes with special ingredients and twenty different steps are great when you have lots of time and motivation, but when it comes to baking I’m usually lacking in both of those things. I just want to cook something delicious, with the minimum of fuss, and these super easy cookie recipes are so simple that my nine year old can make them on his own.

All of these easy cookie recipes only require one bowl for mixing, they can be mixed by hand or using a mixer, and you just dump them on the tray and bake. There are no fancy ingredients, nothing extra to prepare, no refrigerating the dough, no rolling pins, and no fuss.

The recipes are all really forgiving and easy to modify. I always forget to add vanilla or that extra tablespoon of cornflour, and it never matters much. You can switch the sultanas for chocolate chips or viceversa, and play around with wholemeal flour, spelt flour or even oat flour, adding a bit more liquid if you need to.

These cookie recipes are perfect for kids to make. They all have simple instructions and almost all of them follow the same basic method – cream butter, eggs and sugar, add flour and liquid, mix and bake. Once the kids have mastered those basic skills making minor changes is easy.

Banana Choc Chip Cookies. These cookies are what happens when banana bread and a chocolate chip cookie get married and have babies.

Cinnamon Cookies. These are great lunch box cookies and they keep well in an airtight container.

Easy Oat Cookies. Change the sultanas for other dried fruit, or choc chips, or add some nuts if you like.

Easy Freezable Cookie Dough. This recipe makes LOTS of cookies, but it’s perfect for freezing in logs so you can chop off a few rounds and bake whenever you like.

Chocolate Chip Cookies. This is our favourite, easy, soft and chewy, choc chip cookie recipe that we make again and again.

Cornflake Crunch Cookies. This recipe has no eggs and is gluten free if you use gluten free cereal.

Choc Cherry Cookies. This recipe is a delicious variation of our easy choc chip cookies.

No-bake Rocky Road Cookie Bars. Ok, so these might technically be called cookies, but this is a no bake recipe that is super fun for the kids to make.

Cornflake Cookies. There are some things that just take me back to my childhood in an instant, and these cornflake cookies are one of them.

Chocolate Chip Mug Cookie. If you just want one warm, gooey, cookie all to yourself, then this microwave mug cookie is perfect.
