Seasonal Eating – Spring/Summer Meal Ideas.
There are some meals that we all the time, but there are some meals on our menu that are seasonal. When spring rolls around my kids are excited by the return off a few of their favourite spring/summer meals.
Planning seasonal meals is a good way to rotate menu items, and it fits better with our lifestyle. No one wants to be cooking a roast and salving over a hot oven for hours when it is a super hot day, but having a BBQ outside is perfect for when the weather is good.
It is usually cheaper and easier to buy fruit and vegetables in season too and we also take into account what we can grow in our veggie garden according to the seasons. So in spring we eat lots of strawberries and salads, and in summer we add berries and tomatoes and lots and lots of zucchini to our menu!
Here are some of our favourite spring/summer meal ideas.
Main Meals
Kung Pao Chicken Lettuce Wraps from Damn Delicious
Crustless Quiche with whatever veggies are in the garden.
Crusty Parmesan Herb Zucchini Bites from According to Elle
Easy falafel style veggie burgers with salad from the garden.
Zucchini Bake – just like lasagna but with no pasta.
Potato salad with vinaigrette from Jamie Oliver
Easy potato and zucchini bake – a great side dish for almost any meal.
Tomato and Broad Bean (Fava Bean) Pasta because we always grow lots of broad beans in spring!
Baked Bell Pepper Tacos from Peas and Crayons
Greek pasta salad from Baker By Nature.
Tacos and salad with our easy homemade taco seasoning and tortillas
Snacks and Treats
Berry Slab Pie – great with berries or any other summer fruits
5 minute berry frozen yougurt from Gimme Delicious
Crisp cucumber salad (minus the jalapenos) from What Megan’s Making.
Frozen pineapple pops from Eats Amazing.
Homemade ice pops – four flavours!
Strawberry fruit leather – add other summer fruits as well such as plums or peaches.
Wholewheat strawberry muffins from Simple As That
Pancake pockets filled with spring and summer fruit.
