Easy Cumin, Garlic and Beef Stir Fry.

Last night, as I was chopping the carrot for this easy cumin, garlic and beef stir fry, I was thinking about infomercials.

I was thinking that surely there must be a gadget or gizmo that would make chopping all these carrot straws much easier? Surely I just need to watch more infomercials to find one?

This simple beef stir fry is delicious, and quick and easy to make, but if I had a gadget to do the chopping for me this would be an even quicker, and even easier!

Marinating the meat in a combination of soy sauce, garlic and cumin is the secret to this delicious stir fry. Cumin and garlic are such a great flavour combination, and we like to use lots of both in this recipe.

You can buy your beef already cut into strips, or buy some steak and cut it into thing strips.

The longer you marinade the meat the better, but I never remember to do it in advance, and even popping it in for half an hour before you cook works just fine.

You can add whatever veggies you like to this, just make sure you cut them into thin straws of around the same size, so that they cook fast.

Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 500 gm of beef, cut into thing strips
  • 1 tsp olive oil
  • 1 onion cut into rings (optional)
  • 1 medium zucchini
  • 2 medium carrots
  • 1 tbsp minced garlic (or more to taste)
  • 1 tbsp ground cumin (or more to taste)
  • 3/4 cup light soy sauce
  • steamed rice to serve.

Instructions

  1. Combine the cumin, garlic and soy sauce in a bowl, add the beef strips and marinate in the fridge.
  2. Cut the onion into thin rounds, and the zucchini and carrot into thin straws.
  3. Heat a frying pan or wok over a high heat, once hot add the oil and a little more garlic if you like!
  4. Stir fry the onions until they are softened, add the beef strips and cook until browned.
  5. Add the veggies and any extra marinade from the beef and cook for 3-4 minutes or until the veggies are tender.
  6. Serve steamed rice.

    1. I’ve taken to grating my carrot and zucchini for stir fries now. Easier for me and I think my family eat more veggies grated.
