Gingerbread is delicious! And gingerbread men cookies are awesome. But you have to make the dough, roll it out, cut out the gingerbread men, and then bake them, not to mention the decorating…and well, sometimes it just seems like way too much hard work!
So when you are craving gingerbread, but you need a quick and easy recipe, a recipe the kids can make, the answer is gingerbread pancakes!
These mini gingerbread pancakes are the perfect size to eat warm, straight out of the fry pan, or to eat cold packed in a lunchbox. They are simple and quick to make, and they taste just like a soft, sweet gingerbread cookie!
You can make them any size you like. Making lots of tiny ones is fun, or you can use a metal cookie cutter to make shapes.
Make sure you grease the cookie cutter well first, then place it in the pan and fill it with pancake mix. Don’t fill them too full and flip the whole thing, pancake and cookie cutter together, to cook the other side.
But once the kids get a taste of these you’ll be making cookie sized pancakes as quick as you can to keep up with demand!
Feel free to substitute the self raising flour for 1 cup of plain (all purpose flour) of any kind (half plain and half oat flour works well) plus 1 teaspoon of baking soda 1 teaspoon of baking powder.
A sprinkle of icing sugar makes these gingerbread pancakes look festive and fancy, and if you are lucky enough to have Christmas during berry season like we do, add a handful of fresh youngberries!
